Chef's Biography

Originally from Barcelona, Jordi Calvache is the new head chef at Son Julia´s gourmet restaurant. Jordi started his career at the age of fifteen. In the years to follow he has worked for renowned Michelin-star chefs Michel Bras and Pedro Subijara, who he is happy to call his mentors. Jordi has worked in the finest kitchens in Europe and South Afrika, among which the famous two-star restaurant Hacienda Benazuza in Seville, owned by the El Bulli group. Jordi has also worked in Hotel Arts, a Ritz-Carlton hotel, in Barcelona and many five star properties across Mallorca, before he became head-chef in Gran Hotel Son Julia in 2007.

Jordi is a specialized pastry chef and uses a lot of Catalan influences in his dishes that he knows from childhood. Important elements in Jordi´s cuisine at Son Julia are purity and simplicity; Jordi combines only a maximum number of 2 to 3 ingredients in order to experience the honest and full taste of fresh market produce. Jordi attents the “Lo Mejor de la Gastronomia” congress every year where he exchanges ideas and gets new inspiration from the best chefs in Spain.
